Stuffed Pepper Casserole:
Ingredients: green peppers, red onions, brown rice, ground turkey spaghetti sauce, shredded cheese
- Prepare brown rice (or quinoa)
- Prepare ground turkey (or beef) *Not pictured because Paul did this part and I forgot to ask him to get a shot! He would have done it too because he is a good husband!*
- Chop up peppers and onions, cook them on the stove top
- Mix it all in a big bowl. Add spaghetti sauce and shredded cheese. (I use cheddar.)
Sometimes when I prepare it, I chop up some tomatoes and put them in before heating it up in the microwave. Sometimes I add extra cheese. Sometimes I dip tortilla chips in it... yum!
Let me know if you try this recipe or if you have tried anything like it!
I actually love stuffed peppers but have never had it in a casserole. I'll be trying this for sure! Thanks for sharing.ReplyDelete
I think it's a lot easier because it's just dump everything in a bowl and mix it up!Delete
My taste buds never evolved to like peppers! You know at Chipotle how you can get "fajitas" which is the mix of peppers and onions? I loooooove onions so I always have them add "fajitas" but then I sit there for 10 minutes and pick out all the peppers before I start eating lol. It's worth it for the onions though!ReplyDelete
Oh my that sounds tedious! You could make this without pepper. Perhaps add mushrooms and a squash or something?Delete
Yum -- looks great!ReplyDelete
