I don't normally post recipes on my blog. I used to, because that is what I thought all bloggers do. I was trying to fit in. Then one day I was like, "I don't want to fit in!", and I deleted my recipe tab at the top of my page.
HOWEVER, I am sharing a recipe with you today!
WARNING: I did not create this recipe! It is directly from Iowa Girl Eats. I found it when I was randomly googling recipes about two years ago.
A RECIPE I totally forgot about!
While grocery shopping the other day, I realized it has been way too long since I made this Healthy Chicken Salad. I found the recipe years ago @ Iowa Girl Eats. The only things I do different from the original recipe is I don't measure anything and just add to taste. Also, I don't put in onions because Paul is not a fan.
This chicken salad is packed with protein from not only the chicken but the Greek yogurt. It tastes good on a sandwich, in a wrap, as a dip, and even just in a bowl all on it's own. I urge you to try it out!
Ingredients: plain Greek yogurt, chopped celery, sliced onions, dried cranberries, lemon juice, salt, pepper, curry powder
And of course... CHICKEN!
You don't have to grill it but that's what Paul did for me!
All you do is chop up the chicken, and mix it together with all the other ingredients in a big bowl. Refrigerate! I love recipes in which all you have to do is mix everything together and dump it in some Tupperware!
Like I said, you can eat this on a sandwich, as a dip with wheat thins, or even just by itself!

ReplyDeleteI've never thought about using Greek yogurt for chicken salad but that is a really good idea. I've made mac and cheese with Greek yogurt before, which sounds super weird but actually tasted pretty good!
It does sound weird, but I believe you when you say it tasted good! I had GF mac and cheese once. Disgusting. It made me poop.

DeleteThe consistency for GF mac and cheese really depends on what it's made from. I think the GF pastas made from brown rice are the closest to the real thing.
Love chicken salad, and my kids do too which is shocking. I'll try this out for sure.

DeleteI've never made chicken salad, but I love IowaGirlEats website!! I have made several of her recipes and was never disappointed. I do tend to avoid anything with Greek yogurt. I'm not a fan of it :(
ReplyDeleteAw then you would definitely not like this. I mean the spices make it taste less yogurt-y but the taste is definitely still there. That is cool that you like a lot of IGE's recipes! This is the only one I have made because I am not a big recipe person.

ReplyDeleteThe blogging world is so oversaturated with recipes. It overwhelms me. Sometimes I think, I should find a recipe to make! But I just don't even know where to begin
I usually get and idea for a recipe and then I just google to because surely someone has made it before!
