Ways to spice up chicken.

Related Posts Plugin for WordPress, Blogger...Chicken. It is my lunch every day. Sometimes, it's my breakfast. That's right. If I lift in the morning, I eat a cold piece of chicken and a banana on the way to work. It's the quickest way for me to get some protein! Yes, a smoothie would be good, but I am too lazy to make a protein shake. Not too lazy to workout mind you, but too lazy to make a shake.



Paul makes me chicken and he is really good at it. When we have gas for our grill, he grills it. I love burnt chicken! But we haven't had gas for our grill in awhile, so he has been baking it. He does a good job, but I get really sick of chicken quickly if it is not grilled. There was one day last week where I had to force myself to eat a piece on the way to work. I wanted to gag, but I did it.

I suppose I should just go buy some gas for the grill, right!!!??? Okay, it's on the to do list for tomorrow!!!

But in the meantime, I shall write this blog post about the ways I spice up chicken when I think I can't stomach another piece. Hopefully by the time you are reading this, I will have bought gas for the grill and am enjoying smoky, burnt, grilled chicken...

Chicken noodle soup!

Remember, I make soup now? I made my very first batch of soup a couple weeks ago, and since then, I have made 3 batches! I put in noodles, celery, corn, onions, carrots, and of course, chicken. But then I add extra chicken when I fix myself a bowl. (We always have chicken breast in tupperware in our fridge ready to go.) Chicken noodle soup has been my lunch at work for the past week and a half. I am in love!

Chicken fajitas

Okay, so I haven't actually made these yet, but I aspire to make them. Heather @ Girl Goes Running gave me the idea, and even though I have been to the grocery store three times in the past week, I still haven't got the makings for this yet.

Protein bowls

Protein bowls is my catch all term for anything you throw in a bowl that includes some sort of protein. My protein bowls usually consist of chicken, black beans, tomatoes, brown rice, and CHEESE! But you could really just be creative and make your protein bowl in whatever style you wanted. Mine just always seems to be Mexican influenced.

Greek salad w/ chicken

I have been loving Greek salads lately! Lettuce, tomato, feta, black olives, and Greek dressing. Sometimes I'll chop up a little bit of chicken to put on top because at least it's better than just eating plain chicken.

  1. I totally understand! I get super sick of chicken too, quickly. The other night to spice up our fajitas I used larger tortillas and made quesidillas! I have no clue how to spell that, lol. Matt thought it was a brilliant idea...lol. Usually we just bake the chicken breasts with EVOO and a clubhouse seasoning called "Garlic and Red Pepper." It's great! I like them just about over cooked.

    1. You dinner pictures you post on your blog always look very yummy. :) We don't usually marinate our chicken or put dressing on it. Paul just tops it with about 10 different spices. :)

  2. I make chicken for my dog but not really for myself. I do make a version of your protein bowl and mine is usually Mexican inspired as well.

    1. Oh you have a lucky dog! Chrissy looooooves chicken. Sometimes I toss him a little piece from the inside that doesn't have all the spices on it. Shhhh, don't tell Paul. He would flip.

  3. I eat a lot of chicken. A lot. My husband says he gags on it. But that's his problem. I can't eat beef. I always pay the price (GI stuff) when I do. I will indulge him once/month with some beef dish.

  4. I get plenty of protein. Eggs each day for breakfast, some type of chicken, beef or turkey for lunch and also dinner. I do love me a good steak. We treat ourselves to a really good one about once per week. And maybe since I am from Colorado but I love a good bison or elk burger! I know a lot of people have a hard time with animal cruelty but we get our eggs from Rick's brother who has about 10 chickens running in his back yard and we get our meat from a farm in eastern Colorado or my SILs dad. I am very aware of only supporting humane farming practices.

    1. That is something I wish I did. I wish I was more mindful of where my food came from.

      I was thinking about doing hard boiled eggs in the morning... Grab and go.

  5. I love chicken. I love it grilled...I agree it is much better than baked but baked does the trick. I eat it mostly with broccoli. I could eat that everyday. For work I just put the chicken in a Tupperware container, raw broccoli on top. When I microwave it the broccoli cooks and a lazy meal is made! I needed new ideas though and that chicken salad sounds delicious!!

    1. We eat the same lunch! Except mine is frozen broccoli!!! Yeah try the chicken salad it is VERY good and you get protein from the Greek yogurt too. I put it on wheat bread or just dip crackers in it.

  6. I am vegetarian, and mostly vegan, so I don't eat any chicken. I never have too much trouble getting enough protein, though. I eat a lot of beans, lentils, quinoa, and tofu/tempe. Also, green veggies and whole grains have a surprisingly large amount of protein. I eat rather cleanly, so I never have too much trouble.

  7. Wow way too much chicken lol. Honestly we have chicken about 3 or 4 times a week. Mrs schlub has soooo many great meals. Chili with chicken, orange chicken, parm encrusted, and a ton more

    1. I agree, it is a lot of chicken but if I weren't so lazy/cheap I could totally prepare other things!

      Omg parm encrusted chicken sounds very good! (Which is funny because "encrusted" is a gross word hahaha!)

  8. We always have a bag of sliced, grilled chicken in our freezer. My husband marinates it in Italian dressing and grills it. Simple, but good. I eat that chicken on a salad pretty much 95% of my work day lunches! But luckily I am not sick of it. I did wonder - one time you showed yourself prepping weekly lunches, which was chicken and broccoli I think. Do you warm that up at work, or eat it cold? Just wondering since you mentioned eating it for breakfast...

  9. Chicken! Gotta love it. You know what I use for protein in a pinch? Spicy peanut satay flavoured tuna! I buy them in bulk from WalMart. Love that stuff just by itself (I'll eat it with a spoon) or dumped into a salad or thrown into a wrap with a bunch of stuff.

  11. I've recently started baking my chicken with chicken broth to keep it moist. I'm the opposite of you...I like it juicy, but I like to overcook it to make sure it's "safe".

    I need to make myself some chicken fajitas when my kitchen is done. That will be one of the first things. I miss making tacos and such at home!
