Stuffed Pepper Casserole:
Ingredients: green peppers, red onions, brown rice, ground turkey spaghetti sauce, shredded cheese
- Prepare brown rice (or quinoa)
- Prepare ground turkey (or beef) *Not pictured because Paul did this part and I forgot to ask him to get a shot! He would have done it too because he is a good husband!*
- Chop up peppers and onions, cook them on the stove top
- Mix it all in a big bowl. Add spaghetti sauce and shredded cheese. (I use cheddar.)
Sometimes when I prepare it, I chop up some tomatoes and put them in before heating it up in the microwave. Sometimes I add extra cheese. Sometimes I dip tortilla chips in it... yum!

I actually love stuffed peppers but have never had it in a casserole. I'll be trying this for sure! Thanks for sharing.

DeleteMy taste buds never evolved to like peppers! You know at Chipotle how you can get "fajitas" which is the mix of peppers and onions? I loooooove onions so I always have them add "fajitas" but then I sit there for 10 minutes and pick out all the peppers before I start eating lol. It's worth it for the onions though!
ReplyDeleteOh my that sounds tedious! You could make this without pepper. Perhaps add mushrooms and a squash or something?
