Stuffed Pepper Casserole

Related Posts Plugin for WordPress, Blogger...Hey all! I don't share recipes on here much, but today I want to share something I am absolutely loving... Stuffed Pepper Casserole!

Stuffed Pepper Casserole:

Ingredients: green peppers, red onions, brown rice, ground turkey spaghetti sauce, shredded cheese
  • Prepare brown rice (or quinoa)
  • Prepare ground turkey (or beef) *Not pictured because Paul did this part and I forgot to ask him to get a shot! He would have done it too because he is a good husband!*
  • Chop up peppers and onions, cook them on the stove top

  • Mix it all in a big bowl. Add spaghetti sauce and shredded cheese. (I use cheddar.)

I love a meaty casserole, so I like there to be nearly as much ground turkey as there is rice. I am conservative with the spaghetti sauce and the cheese because I can always add more later if I want to. But basically, decide on the amounts of each ingredient according to your own tastes. I don't measure anything, I just make everything, mix it up, and throw it in Tupperware. (When we make food, we make enough so that we can eat it throughout the week for lunch or dinner.)

Sometimes when I prepare it, I chop up some tomatoes and put them in before heating it up in the microwave. Sometimes I add extra cheese. Sometimes I dip tortilla chips in it... yum!

    1. I think it's a lot easier because it's just dump everything in a bowl and mix it up!

  2. My taste buds never evolved to like peppers! You know at Chipotle how you can get "fajitas" which is the mix of peppers and onions? I loooooove onions so I always have them add "fajitas" but then I sit there for 10 minutes and pick out all the peppers before I start eating lol. It's worth it for the onions though!

    1. Oh my that sounds tedious! You could make this without pepper. Perhaps add mushrooms and a squash or something?
