Weekend Wrap Up!

Happy Monday!
I hope you had a great weekend.
Here's what we were up to...

My day started with a lifting session at home. I did alllll the pull ups. I always throw treats for the cats before I leave for the day. Chrissy couldn't find one of them. Can you find it!?

Friday was one of those days at school where there were so many funny/weird things that happened. Nothing bad or anything, it was just a quirky day!

For instance, during chorus, a saw these little flakes of white coming out of a student's pocket. It looked like egg shells, but it couldn't be egg shells, right? Why would a student have egg shells in his pocket? Oh, but he did. It was from his snack, he told me. So there were egg shells all over my floor! Don't worry, I had him clean them up! It totally reminded me of that part in Napoleon Dynamite when he had tater tots in his pocket!

After work, I came home and played cards with Paul and we opened one of the bottles of wine we got in Gettysburg. Adams County Three Ships to the Wind. DIVINE!

Then we made dinner. Sometimes we eat the same thing, sometimes we don't. Obviously, Paul did not make a salad with cheese curls- only I do that!

But I did get him to watch some of The View with me!

Jedidiah left the show (yay!) and Meghan McCain is on now. I am still not sure what I think of her on The View. I'll let you know once I make my final analysis!

It felt great to sleep in until 8am! I did some of my puzzle, drank coffee, and then went for a 6 miler. My knee felt a lot better. Not totally back to normal, but not like it had. We'll see where things go from here...

Then we checked in on little Percy, a kitty we were cat sitting for the weekend. He hid under the bed because he was a little scared of me.

Then we headed to the best place in the world... KNOEBELS!!!!!

It was their first weekend of their Hallow-Fun and it was PACKED. Seriously, I have never been there when it was this crowded before!

We met my parents, Tyler, Debby, and the kiddos there. It was basically a kids day, which was fine with me! Ellie rode The Phoenix with Tyler twice. The second time they got the front seat! Clark rode his very first Knoebels ride- the shark boats!

Clark rode his first ride- the shark boats! He loved it!

Then I took him on the kiddie carousel, which actually went really fast! He was a little scared.

I rode the swings with Ellie and demanded she hold on! We were flying high in the air and she saw the teenagers leave go and put their hands up in the air, so she did the same. "Ellie, hang on!" I demanded. "Why????" she asked. "BECAUSE I SAID SO!!!" Yes, I pulled a "because I said so".

This picture was snapped before he flipped out.

Much of the day was spent in the corn pit with the kids. It was like a ball pit but with corn. It was free and all three kids had so much fun rolling around and going down the slide. Clark staked out a corner.

My mom and I took the kiddos on the GRAND Carousel. Clark was fine on this one because he got a horse that did not go up and down. Plus, Nanny was with him!

We went to the arcade and Tyler brought his ticket bag. He hoards them until he has a TON!

Tyler, Debby, and Paul did the shooting game they like so much.

We also took some family photos. Sorry some of them are dark!

A great day was had by all!

I slept in until NOON! WHAT!!!!???? Omg my sleep is going to be messed up all week. I must have went HARD at Knoebels...

First thing we did once I dragged myself out of bed was go check on little Percy. I got to pet his forehead today!

Paul grabbed some things at Giant because I was still in my pajamas...

Then I came home and blogged. I wasn't sure what else to do or when to do it. This happens when I sleep half the day away. I lose my motivation. I was thinking about running, then thought hmmmm maybe I should lift. I had errands to run but I didn't feel like showering and getting dressed. I had blogs to write, clothes to lay out for the week, puzzles to do... I was feeling a little overwhelmed! Overwhelmed and unmotivated, not the greatest combo!

I ended up not working out. Instead, I did some grocery shopping at Aldi.

Jelly loves Aldi boxes!

I got some more Halloween treats! Mini Rice Krispy Treats. We better get a lot of trick or treaters!!!

We bought our Halloween candy super early, and many of you wondered how we were going to manage to not eat it! Well, take a look! We have not eaten it yet!!!!!

Okay, I randomly started writing a lot about this Halloween candy topic and I realized it's going to have to have it's own blog post. Stay tuned tomorrow, for my thoughts on the HALLOWEEN CANDY.

So I cooked my booty off. I made...

Quinoa surprise!

Quinoa, corn, peas, carrots, mushrooms, onions

Roasted Red Potatoes!

Chicken noodle soup!

Noodles, chicken, carrots, corn, celery, peas, salt, pepper, garlic, parsley.

I was going to make a plantain dessert, but they weren't ripe yet so I will have to wait a few days or so. I have never cooked with plantains before but I am excited!

It was a late night. I didn't even lay out all of my clothes for the week until around 9pm. Yes, I lay out all my clothes I wear to work and all of my workout clothes. It saves me time in the morning.

I'm still trying to wear some of the clothes I don't wear in the winter. It's going to be in the low 60s to low 70s this week, so I can wear some of my short sleeved/no leggings dresses.

Workout clothes!

What would I do without my babies?
They make my life so happy!!!
Tell me something fun you did this weekend!
Have you ever cooked with plantains?

  1. Ya know, I thought of you when I picked my clothes out last night. Funny thing is I ended up picking out a dress this morning that was not in my "pick out pile" for the week!
Looks like you really closed the place down at knobels staying till dark!
I hope whatever issue you are having with your knee. I think i'm having an issue too and that will make 3 of us on the relay team with knee issues, oy!

    1. Sleeping until noon is overrated. It really shortened my day! Wow, that does sound interesting!

  3. I love the pictures of the kids in the corn!! Reminds me of my childhood! My mom used to sell corn kernels from the house when I was little, and We used to have mountains of corn in the patio... like literally 3 tons of corn. We used to climb it like a mountain.

Is your brother saving his tickets for something big? Like an x-box or a tv? what are the big prizes at Knoebels?

I have never cooked with Plantains, it's daunting to me to think of cooking with something I don't know. But I have enjoyed so delicious tostones from my PR friends.

    1. I was wondering where they get the corn and how much it costs??? Maybe you know! My brother is a hoarder and yes he will save the tickets for something awesome for the kids. Not sure what they have at Knoebels that is awesome but probably not much! I read online plantains have to be yellow to be ripe but then my student who cooks with plantains said green is fine. I need to know which it is!

  4. Omg! I have never heard of a corn pit before - that’s cracking me up. I could see that feeling good hahaha. Honestly I just got into eating popcorn after not liking it for years and seeing the pic is making me hungry for popcorn! :D

    1. LOL I did not get hungry for popcorn while watching them play in the corn but that is funny. :) You gotta come up and experience a fall in PA sometime!

  5. That is a lot of cooking. I kind of went through the same thing a couple weekends ago, and I go in spurts. I make dinners, I want to bake, and it just comes out of the blue too. Sometimes I have the ingredients, sometimes I don't.

    1. I think that's the best way to cook if you can- just wait until you're in the mood!

  6. I love that you said "because I said so." Sometimes that's all that matters. I also super love the pic of you in your pajamas. God I've missed you.
