On Monday I had off for MLK Day. It was so nice to have a three day weekend. My alarm was set for 9 but of course I woke up naturally at 6! I did my normal routine in the morning... Coffee, Cats, and CNN. (The 3 C's!!!)
I saw my bananas were going bad, so I quickly whipped up some banana oat cookies. It's literally mashed up bananas and rolled oats. Mix them together, put them on a sprayed pan, and pop them in the oven for 10 minutes. I don't measure anything, I just DO IT!
At 10am I had a therapy appointment. I have been going to therapy weekly since mid October. I have never been to therapy before and I can't even begin to express how extremely helpful it is! I mean, all I have to do is pay someone and they have to listen to me talk for an hour???? That's like a dream come true!
They taste like banana bread!

After my appointment, Paul and I headed to the gym. I have been a running machine these days. I really should have lifted and not done any cardio, but I really wanted to run. ("I really wanted to run" = the story of my life!) So I did a 4 mile progression run ending at a 6:22 pace! Then I did my normal lifting routine. So I got a little bit of everything done.
Then I tried to be productive by going grocery shopping. We just needed some odds and ends but it felt good to get it done. Then I went home and made... what else? A quiche!
I'm working on a post about how I make all of my quiche. Stay tuned....
Later that night I went to the Federal Tap House for a couple ciders. I love cider!
I was happy to have an extra day off to try to heal for good (I have been sick for over a week) and be ready for the kiddos on Tuesday!

I am sorry you are sick! Ugh...must be hard to keep healthy working with kids all day. Yes, therapy is nice. I've been a few times in my life and it really is helpful (if you put in the work). I did have a three day weekend. Rick and I saw a morning movie before he headed up to Winter Park for skiing. We saw The Upside which got some bad reviews but we loved it!

DeleteSounds like a great day off! Looking forward to the quiche post. Hoping you will inspire me to make some!! My kids lucked out with the day off on Monday, a 2 hr delay on Tuesday, and school was canceled today. Lucky kids!

DeleteI'm also looking forward to the quiche post (I rarely rarely cook, but I am trying to work on it)! I took Monday off as a random day to finally recover from work stress over the holiday period, so I felt in tune with everyone in the States who had it off for MLK day (I moved to London in 2007).
ReplyDeleteQuiche is so easy. I mean, I want to act like it's so hard but it is not! I'm glad you got to have a 3 day to recharge! Mental health days are so important.
